Simple and Delicious
Do you love strawberries and have to make all the strawberry things when it’s strawberry season? If you answered YES then you need to add this strawberry pie filling recipe to your list!! It’s delicious and easy…and when you watch the video you will see a mistake I made that can be easily avoided when you know what to look for. So yes, it really is easy!!
How To:
Strawberry Pie Filling
Ingredients
- 5 cups strawberries, fresh or frozen (you can also do this recipe with blueberries)
- 2 cups sugar
- 1/2 cup clear gel
- 2 Tbsp lemon juice
Directions
- Mix all ingredients together in a large pot and let sit on the counter uncovered for 1 hour (for blueberries, 2 hours).
- Cook on medium heat, gently stirring.
- When you start hearing or seeing bubbles (they may not show at the top, you may just hear them when you stir), continue cooking for 1 more minute.
- Remove from heat.
- Fill your jars. If you are going to can, follow canning instructions in my Strawberry Jam post, only increase water bath time to 20 minutes. If not, store in the refrigerator for up to 1 month.
- Enjoy in pies, as a cheesecake topping, over ice cream, pancakes…you name it! It is SO delicious
